Austrian Desserts: A Taste of History

From its origin in Austria, the Habsburg Empire gradually expanded to rule central Europe for centuries. For every cultural group the empire absorbed, it also took on many of the group’s traditions, including its cuisine. And while the empire itself is now just a chapter in the history books, the diverse culinary delights it adopted, both to feed the masses and entertain its royalty, live on in the many delicious dishes still beloved in Austria—particularly the desserts. If you ever find yourself in the Austrian Alps or the streets of Vienna, consider indulging your sweet tooth with these famous regional treats.
Apple Strudel
The best known of Austria’s desserts, this fruity pastry is derived from similar desserts from Turkey. Thin layers of dough are wrapped around a warm mix of apples and spices, and with fine sugar sprinkled on top, the first bite is sure to put a smile on anyone’s face.
Sacher Torte
Invented for an Austrian prince, this isn’t your average chocolate cake. Each layer of chocolate sponge is covered with apricot jam, and the entire cake gets coated in rich chocolate before being chilled, sliced, and served. Fans say it tastes best with a side of fresh whipped cream.

Salzburger Nockerl
Austrians don’t need many ingredients to create great desserts. Salzburger Nockerl is mostly made from eggs, sugar, flour, and air, yet the result is a worthy tribute to the city it’s named for. Before baking, the dessert is arranged in three peaks representing the three hills surrounding Salzburg. 
Mozartkugel
Also from Salzburg, the composer Mozart has several desserts named in his honor, one being the Mozartkugel, a sphere of chocolate-filled almond paste coated in nougat and dipped in bitter chocolate. Though many have copied the recipe, only Mozartkugeln from their home shop in Salzburg may bear the original name.
Linzer Torte
Dating back to the 1600s, Linzer torte is said to be the oldest cake named after a place. Its buttery crust is filled with preserved fruit, then covered with thin strips of dough. In many central European countries, it’s traditionally served as part of Christmas celebrations.
Kaiserschmarrn
This scrambled pancake’s name translates to “emperor’s mess.” Stories say it was meant as a light dessert for the emperor’s wife, but when she declared it too heavy, the emperor said “Let’s see what mess the chef has cooked up,” and he devoured it with great approval. Order one at an Austrian café, and you’ll be eating like a king.

薩爾茲堡蛋霜糕
奧地利人不需要很多原料來製作美味的甜點。薩爾茲堡蛋霜糕主要是由雞蛋、糖、麵粉和空氣製成，而成品是對其命名城市的一個相稱的致敬。在烘焙前，這個甜點會被排成三座山峰，代表著環繞薩爾茲堡的三座山丘。
莫札特巧克力球
同樣來自薩爾茲堡，作曲家莫札特有好幾個以他的名字命名的甜點，其中一個是莫札特巧克力球，是一種填滿巧克力杏仁膏、外面裹上果仁糖、再沾浸苦味巧克力的球狀甜點。雖然很多人複製了這個食譜，但只有來自薩爾茲堡創始店的莫札特巧克力球可以使用原始名稱。
林茲蛋糕
林茲蛋糕可追溯至十七世紀，據說是最早以地名來命名的蛋糕。其奶油酥皮裡填滿果醬，然後覆蓋一條條的薄麵皮。在許多中歐國家，傳統上它會作為聖誕節慶祝活動的一部分來被享用。
皇帝煎餅
這種翻炒的薄煎餅名稱意為「皇帝的一團亂」。故事說它原本是要作給皇帝妻子的一道輕爽的甜點，但當她宣稱這道甜點過於飽足時，皇帝說：「我們來看看廚師料理了什麼亂七八糟的東西」，然後他大為讚賞地吃掉它。在奧地利的咖啡館點一份，你就能像國王一樣享用美食。
